Marinated Stuffed Shrimp


Ingredients:

1 pound unpeeled, large fresh shrimp
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon freshly ground pepper
2 tablespoons olive oil
1 (8 ounce) round smoked Gouda cheese
4 ounces prosciutto or country ham, thinly sliced
1/2 cup olive oil
1/4 cup white balsamic vinegar
2 tablespoons chopped fresh rosemary
1/8 teaspoon ground red pepper


Directions:

  1. Peel shrimp, and devein, if desired. Make a deep slit down back of each shrimp, cutting to, but not through, inside curve of shrimp.


  2. Saute shrimp and next 3 ingredients in 2 tablespoons hot oil in skillet 3 minutes or until shrimp turn pink; cool. (To make ahead, cover and chil until ready to assemble, up to 24 hours.)


  3. Cut cheese into 24 (1-inch) cubes. Cut prosciutto into 24 thin strips. (To make ahead, cover and chil until redy to assemble, up to 24 hours.)


  4. Wrap cheese cubes with prosciutto strips, and wrap shrimp around cubes, securing with wooden picks. Cover shrimp, and chill 10 minutes.


  5. Whisk together 1/2 cup olive oil and remaining 3 ingredients in a large bowl. (To make ahead, cover and chill until ready to assemble, up to 24 hours.) Add shrimp, and toss. Cover and chill 10 minutes.
